These easy skewers are a perfect appetizer for an Indian-inspired meal and pack a protein punch with a Greek yogurt-based raita for dipping. Using curry powder saves time, and you can pick a mild or hot blend to suit your taste.

Curried Chicken Skewers With Raita
Ingredients
For the chicken skewers
- 8 (6-8 inch) wooden skewers
- 12 oz (340g) boneless, skinless chicken breast
- 1 tsp curry powder
- 2 tsp fresh lemon juice
- 3 tsp avocado oil, divided
- 16 cherry tomatoes
For the raita
- 3/4 cup (184g) plain nonfat Greek yogurt
- 1 cup (120g) cucumber, chopped
- 2 tbsp fresh mint, minced
- 1/4 tsp salt
- 1/4 tsp freshly ground black pepper
Directions
Soak skewers in water for at least 30 minutes.
Slice the chicken breast into 8 long strips, then place in a medium bowl. Add the curry powder, lemon juice and 1 tsp avocado oil and toss to coat. Allow chicken to marinate for at least 5 minutes.
Meanwhile, in a medium bowl, combine the yogurt, cucumber, mint, salt and pepper and stir. Refrigerate until time to serve.
Once skewers are done soaking and chicken has finished marinating, working with one piece at a time, fold a strip of chicken into a loose “S” or ribbon shape and thread it onto the skewer. Add a tomato, then continue threading the chicken in a folded pattern, alternating with tomatoes, until each skewer contains 1 strip of chicken and 2 tomatoes.
Prepare a grill to medium heat (325-375°F), then brush the grate with the remaining 2 tsp oil. Grill for 2–3 minutes per side, or until the chicken is browned and cooked through (internal temp 165°F). Serve with raita for dipping.
