These air fryer fries are extra crisp thanks to a light coating of “instant flour.” A blend of very finely ground all-purpose wheat flour and malted barley flour, it’s used to make lump-free sauces and gravy, but it also creates a thin, crisp coating on air-fried ingredients. If you own an air fryer, it’s great to have this flour in your pantry. Look for it in the baking aisle. You can use all-purpose if you are unable to find instant flour or substitute a sifted gluten-free flour blend if you want to go gluten-free.

Air Fryer Truffle Fries

Ingredients

  • 2 medium russet potatoes
  • Cooking spray
  • 1 1/2 tbsp olive oil
  • 1 1/2 tbsp instant flour (or all-purpose flour if you can’t find instant flour)
  • 1/2 tsp truffle salt

Directions

Cut the potatoes lengthwise into 1/4-inch (0.64 cm) thick slices, then cut each slice lengthwise into thin fries. Place the fries in a large bowl of cold water and soak for 10 minutes to remove excess starch and promote even browning.

Meanwhile, preheat the air fryer to 380°F (193°C) and coat the basket with cooking spray. Drain the potatoes, rinse thoroughly with cold water, and drain again. Spin in a salad spinner or pat dry with paper towels to remove excess moisture.

Transfer the fries to a large bowl, drizzle with olive oil, and toss to coat. Sprinkle with the flour and toss gently to coat evenly.

Arrange the fries in the air fryer basket in a single layer, working in batches if needed to avoid overcrowding. Cook for 18–20 minutes, stirring once halfway through, until evenly crisp and golden brown. Season with the truffle salt and serve immediately.
