Sustainable Cheesemaking Cultures : CHOOZIT LIFT culture



The CHOOZIT LIFT culture has been launched by IFF as a cheesemaking culture that’s slated to help revolutionize the production process of semi-hard cheeses to maximize sustainability as well as business benefits. The cheesemaking culture is focused on semi-hard cheese manufacturing and combines an advanced strain design with practical cheesemaking knowledge. The result is that the culture allows for the curd-washing step to be removed from the process for a reduction in water and energy use.

Senior Business Product Director Annie Mornet spoke on the CHOOZIT LIFT culture saying, “The future of dairy production, including cheesemaking, is about achieving more with less—less water, less energy, less compromise.
