The 193-square-meter interior distinguishes itself through innovative use of vernacular materials, most notably through compacted earth construction techniques for the bar and walls — a material approach Mallol developed in collaboration with local artisans. This ancient building method provides natural thermal regulation and acoustic benefits while dramatically reducing the carbon footprint typically associated with conventional construction materials. The Krume Bäcker bakery project in Panama City also boasts custom furniture crafted from submerged native hardwoods recovered from Bayano Reservoir through an ecologically sensitive partnership with the Guna Madugandí indigenous community.
Spatial organization facilitates flexible use from quick service to leisurely dining, with an understated material palette of earth tones and natural textures creating a serene backdrop that focuses attention on the bakery’s central offering – its bread.
