Savor, the innovative food startup backed by billionaire Bill Gates, has unveiled the commercial launch of a butter alternative made entirely from carbon—eliminating the need for plants or animals in its production. This breakthrough product offers a sustainable, eco-friendly substitute for palm oil and other commonly used fats, addressing the environmental challenges associated with conventional agriculture. By harnessing cutting-edge technology, Savor’s carbon-based butter promises to reduce land use, deforestation, and carbon emissions, making it a game-changer for the food industry.

“The process doesn’t release any greenhouse gases, and it uses no farmland and less than a thousandth of the water that traditional agriculture does,” Gates wrote in a blog post. “And most important, it tastes really good—like the real thing, because chemically it is.”

Restaurants and bakeries are poised to be among the first to introduce this sustainable fat into their kitchens starting later this year. Beyond this initial launch, Savor is actively partnering with multinational consumer packaged goods companies on ingredient innovation projects.
